Natalie Morales, who began her career in banking, is a coanchor and national correspondent for news and talk programs on National Broadcasting Corporation (NBC) networks. With a Puerto Rican father and a Brazilian mother, Morales grew up in a military family and, for the first eighteen years of her life. often lived overseas, including in Panama, Brazil, and Spain. Morales, who majored in journalist and Latin American studies in college, was named one Hispanic magazine’s “Top Trendsetters of 2003.” An avid runner, Morales has competed in five marathons and in triathlons as well.
In her first book, At Home with Natalie: Simple Recipes for Healthy Living from My Family’s Kitchen to Yours, written with Ann Volkwein, Morales provides 125 recipes drawn from her Brazilian and Puerto Rican heritage. “I’ve always loved cooking and the kitchen to me is really the heart of my home,” Morales told People Online contributor Shay Spence, adding: “I get really excited about experimenting and trying new things.” Morales’s career combined with being the mother of two boys led her to learn how to cook easy but healthy meals.
However, Morales told Shay that much of interest in cooking really began when she was a television reporter earning $18,000 a year. She and her roommates in her New York City apartment at the time would share cooking duties to save money. Morales also noted in the interview that her family’s move to Los Angeles, California further boosted her interest in cooking du to the “great food influences all around me. Everything is fresh, organic and straight from the farm year-round. My family is eating so much cleaner.”
As a result of her background, Morales provides recipes that reflect both her global upbringing and her introduction to healthier food in California. According to Morales, the recipes incorporate a lot of the lifestyle changes and foods she’s enjoyed since moving from New Jersey to Los Angeles in 2016. However, she told a Today Show website contributor: “My mom is my greatest influence and some of the idea of writing this book came from the desire to preserve my family’s legacy in the kitchen.” Morales has also noted that she was also inspired to write a cookbook by her time on the Today Show watching chefs such as Bobby Flay and Ina Garten do cooking demonstrations on the show.
Writing in the book’s introduction, Morales discusses the importance of having family meals, where the entire family gathers together. She points out that it is not always possible considering her schedule and her boys’ participation in various activities. However, she stresses that they make a concentrated effort to have a few evening meals together each week. As a result, most of the recipes in At Home with Natalie are designed for busy moms. These recipes range form breakfasts such as protein shakes to burritos with beans and egg to quick snacks for health lunches, such as grain bowls and protein laden salads using ingredients such as salmon, quinoa, and tofu.
In the category of dinners, Morales includes appetizers and one-pot meals, such as her recipe for slow cooked shredded beef and sweet-pepper rope vieja. Other meals include chicken in garlic sauce, sweet and spicy slow roasted pork, and pesto shrimp with lemmon pepper fettuccine. She also includes healthy variations of favorite foods such as pizzas and hamburgers, replacing beef-based burgers with ground turkey. Morales offers advice on shopping at the supermarket, including shopping for shortcut items for recipes, such as rotisserie chickens, frozen dough, and tomato sauce in a jar. “Home cooks will find solid, comforting, and familiar meal ideas in these uncomplicated, wholesome recipes,” wrote a Publishers Weekly contributor.

Natalie Morales has been gracing television screens for two decades as a news anchor, but now she’s showing off another side—her culinary skills.
“I’ve always loved cooking and the kitchen to me is really the heart of my home,” Morales tells PEOPLE in the latest issue, on newsstands Friday. “I get really excited about experimenting and trying new things.”
For Morales, whose debut cookbook At Home with Natalie hits shelves April 17, this hobby was born of necessity. “When I was living in my first New York City apartment and making $18,000 a year working in local TV, my roommates and I would swap cooking nights to save money,” she says.
Now a mom of two, Morales, 45, has moved to Los Angeles after transitioning from Today coanchor to Access Hollywood host, and she is embracing the city’s advantages. “Living here, I have great food influences all around me,” she says. “Everything is fresh, organic and straight from the farm year-round. My family is eating so much cleaner.”

Morales says her new position has afforded her more time with her husband Joe, a 47-year-old investment banker, and sons Josh, 14, and Luke, 9. “The hardest part about doing the Today show was all of the travel and breaking news, which meant missing out on so much of my kids’ lives. I still have a busy schedule, but I can be out the door at 5:30 instead of 4 a.m.”

She’s also been able to distance herself from the drama that rocked Today following the firing of Matt Lauer in November over allegations of inappropriate sexual behavior in the workplace. Though Morales says that particular news left her “in shock,” she has experienced the struggle of being a woman in a traditionally male-dominated field.
“I think every woman in the workforce can relate, whether it’s gender pay disparity—I’ve often been paid less than my male counterparts—or sexual harassment,” she says. “That’s why I talk to my boys all the time about making sure they’re raised with the right ideas, to know how to treat women in a way that’s respectful and equal. I believe they will never know the difference and there shouldn’t be a difference.”
Though this is her first time as a permanent west-coast resident, she is no stranger to making big moves. “The hardest question for me to answer is where I’m from,” says the self-described Air Force brat who was born in Taiwan to a Puerto Rican father and a Brazilian mother and lived in Panama, Brazil and Spain before moving to New Jersey to study journalism at Rutgers.
Her cookbook highlights cuisine from this diverse heritage with some of her family-favorite recipes like pulled chicken tacos (below).
“Having lived in these places and traveled so much as a child really is what shaped my narrative, not only just as a journalist but as a mom and a home cook,” says Morales. “That’s sort of the inspiration for the book. You know, global cuisine made easy.”

Natalie Morales’ Pulled Chicken Tacos
2 Tbsp. extra-virgin olive oil
1½ lb. boneless skinless chicken breasts
½ tsp. kosher salt
¼ tsp. black pepper
¼ cup chopped white onion (from 1 small onion)
1 (14.5-oz.) can diced tomatoes, undrained
1 Tbsp. chili powder
1 tsp. ground cumin
1 tsp. dried oregano
½ tsp. granulated sugar
2 tsp. red-wine vinegar
2 garlic cloves, minced
¼ cup fresh lime juice (from 2 limes)
8 to 12 soft tortillas
1. Heat olive oil in a large skillet over medium. Season chicken breasts with salt and pepper, and cook in skillet until golden, about 3 minutes per side. Add onion, and cook, stirring occasionally, until slightly translucent, about 2 minutes. Stir in tomatoes, chili powder, cumin, oregano, sugar, vinegar and garlic. Reduce heat to medium-low and simmer, uncovered, stirring often, until chicken is cooked through, about 15 minutes.
2. Transfer chicken to a cutting board, and shred using 2 forks. Return to skillet and add lime juice. Bring to a simmer over medium, and cook until thickened and chicken has absorbed most of the liquid, 5 to 8 minutes.
3. Warm the tortillas, sandwiched between damp paper towels, for about 30 seconds in the microwave. Divide filling evenly among tortillas, and serve with your taco toppings of choice.

Natalie Morales-Rhodes[1] (born Natalie Leticia Morales; 6 June 1972) is an American journalist working for NBC News. She is the Today Show West Coast anchor and appears on other programs including Dateline NBC and NBC Nightly News.
In August 2016, after the Rio Summer Olympics, Morales moved to Los Angeles, where she became both the Today show's West Coast anchor, Billy Bush's replacement as host of Access Hollywood and Access Hollywood Live, while continuing as a correspondent for Dateline.[2]

Early life
Natalie Morales was born 6 June 1972 in Taiwan, to a Brazilian mother, Penelope, and a Puerto Rican father, Lieutenant Colonel Mario Morales, Jr.[3] She speaks Spanish and Portuguese and spent the first eighteen years of her life living in America and overseas in Panama, Brazil, and Spain as a "U.S. Air Force brat". She graduated in 1990 from Caesar Rodney High School located in Camden, Delaware.[4][5]
Morales holds a Bachelor of Arts degree from Rutgers University with dual majors in journalism and Latin American studies.[6] She was a member of Phi Beta Kappa and graduated Summa Cum Laude.[7]
Career
Following college, Morales worked at Chase Bank before pursuing her journalism career.[8]
Morales served as a weekend anchor/reporter and morning co-anchor at WVIT-TV in Hartford, Connecticut, where she reported on the Columbine shootings, Hurricane Floyd, the 2000 Presidential election and the September 11, 2001 attacks. She also co-hosted and reported for the Emmy-nominated documentary, Save Our Sound, a joint production with WNBC on preserving the Long Island Sound. She began her on-air career at News 12 – The Bronx as the first morning anchor. She also served as camera operator, editor and producer for that network. In 1999, she was voted one of the 50 Most Influential Latinas for her news coverage and reports by the Hispanic daily newspaper El Diario La Prensa. Previously, Morales spent two years working behind the scenes at Court TV.
Morales was an anchor and correspondent for MSNBC from 2002 to 2006. She covered a number of major news stories there including the 2004 Presidential election, the 2004 Summer Olympics in Athens, Greece, the Iraqi prisoner abuse, Operation Iraqi Freedom, the Space Shuttle Columbia disaster, the Northeast Blackout of 2003, the 2002 Beltway sniper attacks and the investigation and trial of Scott Peterson. Additionally, she was named one of Hispanic Magazine’s Top Trendsetters of 2003.
Morales joined the Today show in 2006 as a national correspondent,[9] and was named co-anchor of the third hour of the show in March 2008.[6][10] On 9 May 2011, it was announced that Morales would replace Ann Curry as the news anchor for Today, when Curry succeeded Meredith Vieira as host of Today in June 2011.[11]
Personal life
Morales married Joseph Rhodes on 22 August 1998.[7] In 2002 they purchased a $1 million USD turn-of-the-century townhouse in Hoboken, New Jersey, and expanded it in 2008 to 3,600 square feet. In June 2016, after Morales was made the Today show's West Coast anchor, the family put the Hoboken townhouse on sale, and moved into a house in Brentwood, California the following month. By October, the townhouse had sold for $3.1 million USD.[12]
In early 2004, Morales' son Josh was born via C-section at Hoboken's St. Mary Hospital.[13] Their second son, Luke Hudson, was born in late 2008.[14]
Morales is an avid runner, having competed in five marathons, including three New York City Marathons. Morales also participates in triathlons.[15] She has been featured in a full-length article and on the cover of the October 2010 issue of Triathlete Magazine.[16]

"My mom is my greatest influence and some of the idea of writing this book came from the desire to preserve my family’s legacy in the kitchen," Morales told TODAY Food via email. "Also, my move to California and my healthy lifestyle has inspired [me] to eat and cook more cleanly. I’m fortunate to have wonderful farmers markets that I shop at every weekend, and that has also inspired me."

When it comes to her cooking style, Morales says she's always been influenced by different cultures, especially Latin American cuisine celebrating her own heritage. She's previously showcased some family favorites on TODAY like her slow-cooker ropa vieja and tortilla espanola.
"Some of these recipes I have been making alongside my mom since I could reach the counter," Morales said, adding, "I grew up watching her and that's what inspired this. Others are globally inspired, or I developed over the years for my family, or picked up in my travels..."
Morales, who has a Puerto Rican father and a Brazilian mother, lived in Panama, Brazil and Spain, growing up in an Air Force family. She says that while the cookbook will include dishes that reflect traditional global flavors, it also includes plenty of recipes that are easily adaptable for modern, busy families.
"I wanted to share some of my favorites that I have lightened up or that have added health benefits," Morales said. "People always ask me 'What's your secret?' and 'How do you do it as a mom and someone who has a very busy career?' Well, the book is my answer. I don't mind taking short cuts like using rotisserie chicken or jars of tomato sauce."

It looks like we can expect plenty of fresh and healthy globally influenced fare — like an easy but flavorful gazpacho, whole wheat spaghetti carbonara and a unique twist on tacos — among Morales' signature recipes.
But if you're looking for a little meal inspiration right now, Morales revealed one of her favorite tips to get dinner on the table faster: "Try to meal plan each weekend for the week ahead," said the anchor. "Make things that will last or can be reused in different ways: for example, pulled chicken or pork that can be used as burritos, in sauces or to top off salads for a work day lunch."

Today Show anchor and internet cooking series host Morales takes readers inside her kitchen with 125 easy-to-assemble recipes inspired by her family's Brazilian and Puerto Rican heritage. Combining her passion for Latin food with healthy, flavorful family fare, Morales presents mealtime staples perfect for busy moms. Breakfasts include protein-packed shakes, overnight oats, and burritos with beans, eggs, and Canadian bacon. Grain bowls and salads use farro, quinoa, salmon, and tofu for healthy lunch "quickies." Appetizers feature her grandmother's chicken empanadas and a tapas platter of manchego, Serrano ham, and fig jam. Slow-cooker shredded beef and sweet-pepper ropa vieja is a true one-pot "people-pleaser." A section titled "All Things Flan" showcases coconut and pumpkin variations. Glamorous and globetrotting, NBC's Natalie Morales could easily be forgiven for ordering take-out for family meals. But Morales, who with her sisters helped her mom cook almost every night when growing up, believes good food can bring a family together.
“I’m a busy mom, always on the go, and the way we connect is around the dinner table, where we have conversations and talk about what’s going on,” she says.
Morales finds chopping and sautéing as therapeutic and relaxing after her busy work day, which often starts at 3 a.m.
The meals she prepares are an amalgam of her life experiences, which she captures in her new cookbook, "At Home with Natalie: Simple Recipes for Healthy Living from My Family's Kitchen to Yours."
“I’m Brazilian and Puerto Rican and an Air Force brat – we lived in Central and South America, and I spent ages 12 to 17 in Spain,” she says. “Now, getting to try new foods is one of the great parts of my job.”
Morales, who recently covered the Winter Olympics in Pyeongchang, spent her spare time there sampling Korean barbecue.
“For me, food is the foundation of a culture and tradition – you get a real idea of the country when you’re eating their foods,” she says. “I remember going to Cyprus – best night ever – I ended up dancing on the table, and so did the whole crew. I went to Chile to report on 33 miners trapped 2,300 feet underground for over two months and was there when they were rescued. There was all this food on the tables waiting for them, and sitting and eating helped us break through the barriers.”
Morales says she was inspired to write her cookbook after watching chefs such as Giada De Laurentiis, Bobby Flay and Ina Garten demonstrate how to cook on the "Today" show.
“Their recipes were easy enough for me to do, and that inspired me to create a book with simple, but exciting recipes,” Morales says. “The book is also a way of honoring the legacy of my own family by including dishes I ate when I was young.”
These include her grandmother’s Ropa Vieja – shredded meat, peppers and onions (she’s modernized it by using a slow cooker) – and the chicken empanadas her mom makes.
“These are all part of my heritage,” she says. “I wanted to pass that on.”

Ropa Vieja
Serves 6 to 8.
1 1/2 pounds flank steak
Sazón seasoning (see note below)
1 medium yellow onion, thinly sliced
1/2 cup red bell pepper, thinly sliced
1/2 cup green bell pepper, thinly sliced
1 (14-ounce) can crushed tomatoes
1 cup beef broth
2 tablespoons tomato paste
1 tablespoon red wine vinegar
2 garlic cloves, minced
1 tablespoon dried oregano
1 tablespoon ground cumin
1/2 bottle beer, such as a pale ale
Tabasco sauce (optional)
1 cup halved pimiento-stuffed Manzanilla olives (optional)
Fresh cilantro, chopped (for garnish)
Season the steak with Sazón, then put the meat in a slow cooker. Layer the onion and bell peppers on top. Add the crushed tomatoes, broth, tomato paste, vinegar, garlic, oregano and cumin, stirring to combine.
Pour in the beer and a splash of Tabasco, if desired. Spoon and stir the seasoned liquids over the beef and vegetables. Cover and cook on low for 8 hours, or high for 4 hours. Toward the last hour, add the olives, if using.
When done, shred the beef using two forks. Top with cilantro and serve.
Note: Sazón is a Spanish seasoning found in the Latin aisle (Goya makes a popular version). Or, if you can’t find it, a combination of salt, pepper and garlic salt will do. If you prefer a crispier Ropa Vieja, you can sear the flank steak first in 2 tablespoons olive oil before placing it in the slow cooker.

Summer Berry Tarte Tatin
Serves 6 to 8.
For the dough:
5 tablespoons unsalted butter, cut into small cubes and chilled
3/4 cup all-purpose flour, plus more for dusting
1/4 cup whole wheat flour
1 tablespoon sugar
Pinch of salt
1 large egg yolk
2 tablespoons ice water
1 teaspoon apple cider vinegar (this makes the crust flakier)
For the filling:
1/4 cup sugar
1 tablespoon water
1 tablespoon fresh lemon juice
1 teaspoon pure vanilla extract
3 tablespoons unsalted butter
8 ounces fresh strawberries, halved
8 ounces fresh raspberries, half chopped and half left whole
4 ounces fresh blackberries
In a large bowl (or in a food processor), combine the butter, flours, sugar and salt, using your fingers, until the butter is distributed throughout, smaller than pea size. Add the egg yolk, water and vinegar, and stir using a spatula or wooden spoon, until the dough has just come together – do not overwork it.
Dump the dough onto a floured surface and form it into a disc; add more flour or water if the dough seems too sticky or too dry. Wrap it in plastic wrap and refrigerate for at least 2 hours or up to 2 days.
Heat the oven to 400 degrees.
To make the filling, in a small saucepan, stir together the sugar, water, lemon juice and vanilla extract over medium heat. Stir gently until the mixture simmers and cook until it is the color of a light caramel, being careful not to let the syrup get too dark, about 5 minutes.
Carefully stir in the butter and continue stirring until the sauce is smooth. Pour the caramel syrup into an 8- to 10-inch oven-safe skillet, pie dish or cake form, tilting it to coat the bottom.
Arrange the strawberries, whole raspberries and blackberries in a concentric pattern over the bottom of the dish. Fill in the gaps with the chopped raspberries.
When the dough is sufficiently chilled, roll it out into a circle that is about 1 inch larger in diameter than the skillet or dish.
Lay the dough on top of the fruit filling, then tuck the sides inside the pan or baking dish. Using a paring knife, cut four 1-inch slits across the top to release steam as it bakes.
Bake the tarte until it is lightly browned and the berries are bubbling, 25 to 30 minutes. Remove from oven and cool for 15 to 20 minutes.
Take a large round plate and place it on top of the tarte tatin. Over the sink, hold the plate and tarte dish or pan together tightly and flip them over quickly. The idea is to keep the juices as much on the plate as possible and the berries in place.
Serve with a dollop of crème fraîche, light whipped cream or frozen yogurt.
