Signe Johansen is a Norwegian cook and writer who has been popularizing Scandinavian food and culture in her adopted country. Johansen moved to England in 1999 to attend the University of Cambridge. After completing her bachelor’s degree in archaeology and anthropology, Johansen attended the Leiths School of Food and Wine in London. She next went to work in several restaurants, and she also returned to the University of London to earn a master’s degree in the anthropology of food. As Johansen noted in an online Balterzens interview, “after university I thought about going to law school, I went to the States and I considered doing a PhD. But none of it made me feel joyous. I wanted to do something that made me happy, and I realised that where I was happiest was in the kitchen.” She added: “I describe myself as a cook, not a chef. I make really simple things. I’m constantly amazed how people try to overcomplicate food. I think people forget that all you need to do is keep it simple, source good ingredients and you can’t go wrong. It’s a very European philosophy. It’s also liberating; the idea of knowing that you can keep things simple, have faith and trust your instincts.”
Johansen has shared her food philosophies as a cooking instructor and as a guest on such television shows as Kirstie’s Handmade Christmas and Sunday Brunch. She has served as director of the EastScandi supper club in London, and her recipes have appeared in such periodicals as the Times, Sunday Times, Daily Mail, Stella and Marie Claire. For her first book, Johansen teamed with With Fiona Beckett, Guy Millon, and James Ramsden to write The Ultimate Student Cookbook in 2009. Johansen released her first solo cookbook, Scandilicious: Secrets of Scandinavian Cooking, two years later. Her follow-up cookbook, Scandilicious Baking, came out in 2012. Next, in 2017, Johansen combined her love of Scandinavian food and culture to write How to Hygge: The Nordic Secrets to a Happy Life.
Commenting on her efforts to promote her native cooking and lifestyle in a Daily Mail Online interview with John Koski, Johansen explained: “We’ve [Scandinavians] been very bad about trumpeting our food heritage, but a new generation of chefs, cooks and food writers in Scandinavia and abroad are putting it on the map. We may not have the same restaurant tradition as France, but we have some really tasty, authentic food which is quite easy to prepare.” The author also told the Balterzens interviewer that “Britain has a love affair with the flavours of the Mediterranean but in terms of the kind of food that is grown here, there’s a lot more in common with Scandinavia. . . . It’s been interesting in the last two years to watch the rise of the new Nordic food movement. The Scandinavian attitude to food isn’t about class or aspirations; it’s a deep-rooted understanding of food and cooking from scratch, using what’s in season or preserving food for use in winter. A lot of chefs have returned to the traditions of pickling, curing and smoking.”
The traditions are evident in How to Hygge: The Nordic Secrets to a Happy Life, which discussed the Danish-Norwegian tradition of Hygge (a word that encompasses feelings of coziness and camaraderie). It’s this practice that helps Norwegians get through the long and dark winters, and it revolves around cooking and spending time with friends, though it really speaks to a philosophy that centers on enjoying the simple pleasures of life. Hygge can mean anything from spending time with family and friends to lighting a candle or exercising outdoors. As Johansen explained, hygge is about balance and hospitality. Creating a warm and inviting home, and cooking and eating are all part of the hygge lifestyle, and Johansen includes fifty recipes in the book.
Discussing How to Hygge in her Balterzens interview, Johansen remarked: “There’s lots of good data showing that Scandinavia has exceptional standards of living and in this book I’m trying to analyse why. I studied anthropology at university so the idea behind the book is to understand everything in context. It’s too simplistic to look at one element of Nordic living; everything is interlinked.” The author additionally stated that “the book also has elements relating to kinship and community, as well as nature and the outdoors. Everything starts with nature. The hygge mindset is based on the strategies we developed to get us through the long, dark winters.”
Anne Heidemann praised Johansen’s efforts in Booklist, and she advised: As camaraderie is a defining characteristic of hygge, ideally the preparation of these dishes will be a shared activity.” According to a Publishers Weekly Online columnist, “Johansen’s tone is an embodiment of the [hygge] philosophy: she encourages readers to appreciate the small moments.” Another positive assessment appeared on the Info Cafe: Davenport Public Library’s Reference Blog, and a critic found that the book “moves past cooking and decorating tips to sections about how connect more with the people we care about . . . In the end, the message is to focus on the little details that make your life warmer and cozier.”

My kitchen is … tiny, like most London kitchens, but it has great natural light from a big window that catches the sun in the afternoons. It looks out over all the neighbouring backyards and gardens – there’s a fig tree immediately behind our flat that I love. The space is painted white, with white tiles and grey grouting. Our counters are wooden laminate, and our floor parquet. We’ve lots of closed storage, so the surfaces are clear and there’s space to work. It’s functional, with a nice burst of green from a selection of architectural succulents.
My favourite kitchen tool is … a really sharp knife. I don’t have a particular one in mind – when I cook, I just need a large one that feels solid in the hand.
My storecupboard staple is … sourdough crisp bread. They’re very involved and time consuming to make yourself, so I always have some Peter’s Yard ones in the cupboard. They’re the simplest snack – I love them with butter, scrambled eggs, smoked salmon, charcuterie, goat’s cheese and herbs, pickles, or chocolate spread for something more indulgent …
When I’m starving I … have eggs – any which way. I try to eat some every day. I don’t have a favourite way to prepare them, but I do find myself scrambling them – very softly, with lots of butter - more than anything else.
My culinary inspiration is … the Barefoot Contessa, Ina Garten. I find many chefs inspiring, but she is definitely one of my favourites. She’s so warm and friendly, the exact opposite of a martyr in the kitchen. Entertaining should be fun and easy. She has an impossibly perfect life in the Hamptons – she had a memorable cameo in 30 Rock, one of my favourite comedies. When I’m cooking or working in the living room, if she’s on the Food Network I’ll have her on in the background. I love her gentle, convivial presence.

My best-kept kitchen secret is … batch cooking; stews, dals, bologneses … the amount of time that goes into preparing a dish for 4 or for 12 is the same, so it makes sense to maximise your time and always make much more than you need, then freeze it.
When I’m invited to dinner I always take … some Nordic homemade jam – plum or wild blueberry. I make a very punchy tart jam, not overly sweet, with a lot of flavour. People always love homemade jam.
Everything tastes better with … butter. It is generally my fat of choice when cooking. I make my own, but I also usually buy some too – both salted and unsalted. I go through so much of it.
When I go shopping I … try to keep a well-stocked storecupboard. I do an inventory each month, then do a major shop. During the week, I’ll do top-up shops, but not when I’m hungry – that’s never a good idea. I like to write a good list, and stick to it.
For dinner tonight … chilli con carne, using a batch of bolognese I made last month – I’ll add in kidney beans, cumin butter, spices, and serve it all with lime and coriander and rice, and greens in a salad.

Signe's latest book, How To Hygge, was published by Pan Macmillan (Bluebird Books) in October 2016. Signe will have two books out with Bluebird Books in 2018: the first is Solo: The Joy of Cooking for One and later in the year a book celebrating the art of the cocktail will be released.
Signe has also written for the FT, delicious. Magazine, and her recipes have appeared in all the major UK press including The Times, Sunday Times, Daily Mail, Stella and Marie Claire. She has taught cookery classes at all the major UK cookery institutions and has appeared with Kirsty Allsop on Kirstie’s Handmade Christmas to talk about how to have a Scandi Christmas, Norwegian cooking on What’s Cooking and a segment on Scandi baking on Sunday Brunch.
For two years Signe ran the EastScandi supper club in London which was featured in the New Yorker’s article on Nordic Noir. Her Instagram feed was cited by Grazia as one of the best food instagrammers.

Scandinavian baking - it’s just Danish pastries and rye bread, right?
I suppose that’s what people typically think, but there’s so much more to it! There’s a huge variety of breads, cakes, pastries and biscuits. We have a tradition called fika, where we sit down with friends for a cup of coffee and a slice of cake, usually in the afternoon, and solve the problems of the world. It’s something I grew up with.
So why haven’t we heard more about it?
Unlike the French, we’ve been very lax about promoting our baking. If someone is familiar with Scandinavian baking, it’s either because they’ve been there or have a family connection. I’d love someone to open up Scandinavian bakeries across the UK because I believe our baking is just as good as French baking, if not better.
Isn’t Scandifood finally having a moment?
Yes, and it’s long overdue. We’ve been very bad about trumpeting our food heritage, but a new generation of chefs, cooks and food writers in Scandinavia and abroad are putting it on the map. We may not have the same restaurant tradition as France, but we have some really tasty, authentic food which is quite easy to prepare.
Why should it appeal to British taste buds?
In terms of climate and sourcing ingredients locally, the UK has much more in common with Scandinavia than southern Europe. Britain is on the same latitude as Denmark, not Provence, so it makes sense to look to our northern European neighbours rather than constantly looking south.
My salted caramel and almond-topped sponge is really just a variation of a Victoria sponge, which is very familiar to most Brits.
We know Scandinavia for its gloomy crime dramas. Surely cakes are far too jolly?
There’s light and dark in the Scandinavian character and that’s reflected in our food culture. You have indulgent cakes and sweets, but you also have deeply savoury dishes, such as cured fish and smoked meats, that go back to our Viking heritage. TV dramas like Wallander and The Killing paint a very distinctive image of Scandinavia, but it’s certainly not the whole picture.
So what would Wallander and Sarah Lund enjoy?
When you’re concerned with murder you’re probably not going to be thinking about cakes too much! I think they’d go for the open sandwiches, which are energy rich, quick to eat and not too frivolous.
What’s your food philosophy?
One of the problems with food in this country is that it’s often associated with aspiration and class, and that’s the wrong way to approach it. You don’t have to spend a lot of money on food. With a little bit of skill and knowledge, you can create something really spectacular from a small range of fairly frugal ingredients.
Who would you invite to a fantasy tea party?
Both my grandmothers, because they were great bakers; Tina Fey from 30 Rock and Sofia Vergara from Modern Family, who are both really funny; someone musical like Ella Fitzgerald or Etta James; Michelle Obama, who would have a lot of stories to tell; and all my girlfriends.
And what’s on the menu?
I’m a little bit of a tea snob, so I would have something from the Rare Tea Company, which does fantastic teas (www.rareteacompany.com). Cinnamon buns, cherry and pistachio pavlova, which is really pretty with edible flowers, lemon nutmeg madeleines, brownies and probably some mini-open gravadlax sandwiches on rye bread. That would keep everyone going.
Anything left to say about Scandinavian food?
Scandinavia has an incredible seafood culture and I’d like to write something on that. Most books on fish are written by male chefs who have great fishmongers, or who even know the fishermen. I think there’s room for a woman to write a book about seafood, which makes it easily accessible to the home cook.

SIGNE JOHANSEN: BRINGING HYGGE TO HARROGATE!

We’re unbelievably excited about presenting a special event with renowned food writer and cook Signe Johansen. It’s at Harrogate Theatre on 25th October, and we’d love you to join us!

We’re not exaggerating when we say that Signe – or Sig, as she prefers to be called – is one of our Scandi baking idols. And with good reason: she’s written two amazing books on the art of Scandinavian baking and cooking. Her latest release, How to Hygge: The Secrets of Nordic Living, is out on 20th October and is all about the Scandinavian lifestyle. It features 50 recipes alongside lots of other tips on taking a more ‘hygge’ approach to life. We definitely like the sound of that!

When we heard that Sig was touring the UK to launch her new book, we got in touch with her and asked if she’d like to come to Harrogate and hold an event with us. Imagine how thrilled we were when she said yes!
So that’s how we’ve ended up presenting a special one-off Q&A and book signing event with Sig at Harrogate Theatre. We’ll be serving some Scandi treats, interviewing Sig on stage about her book and asking her about everything from her Norwegian childhood and her love of Scandi food to her Nordic approach to life.
Along with our sister restaurant Norse and supplier Hesper Farm Skyr, we’ll be providing Scandi food such as cinnamon buns, waffles and skolebrød.
Also joining us will be The Little Ripon Bookshop, who will be providing copies of How to Hygge for the book signing. Leeds-based Scandi lifestyle and interiors retailer Enkelhed will be setting up a pop-up shop for the evening, selling homeware such as this:

Sig began her career in food after leaving university, training at the Leiths School of Food and Wine in London. She worked at several of the UK’s top restaurants before returning to university to complete a Masters in the anthropology of food.
Her book Scandilicious: Secrets of Scandinavian Cooking was published in 2011, containing more than 80 recipes from traditional Scandi cuisine, from cinnamon chestnut bread to homemade gravadlax.
This was followed by Scandilicious Baking in 2012 which, as the name suggests, included recipes for baked Scandi treats that were commonly served during Sig’s childhood in Norway.
Sig has also contributed to 12 other food and restaurant books, as well as writing articles for national newspapers and magazines, and appearing on TV.
Her latest book, How To Hygge: The Secrets of Nordic Living is published later this month and explains more about the concept that’s become a bit of a buzz word this year. In exploring the culture of hygge, the book guides readers on how to adopt it in their life. It includes sections on the joy of fika, Scandi style in the home and food and drink, including 50 recipes.

We spoke to Sig to find out more about her, her love of food, her visit to Harrogate and, of course, her tips on following a hygge lifestyle. Here’s what she had to say:
Hi Sig. We can’t wait to meet you for the event at Harrogate Theatre! Have you ever visited the town before?
I’m so excited about coming to Harrogate! I’ve been to York, Leeds and the Dales but not Harrogate. I’m really looking forward to seeing what’s going on. Whenever I go to a new place, I like to explore.
I’ve been following Baltzersen’s on social media for a while now and I love what they do so I can’t wait to meet the team. Everything they make always looks so delicious and they have such a positive attitude. I wish we had a Baltzersen’s in London!
Our mission at Baltzersen’s is ‘to provide Scandi-inspired food to comfort and sustain’ - and our customers love it! Why do you think Scandinavian food has become so popular in the UK?
I think it’s more a question of why hasn’t it happened sooner? Britain has a love affair with the flavours of the Mediterranean but in terms of the kind of food that is grown here, there’s a lot more in common with Scandinavia.
It’s been interesting in the last two years to watch the rise of the new Nordic food movement. The Scandinavian attitude to food isn’t about class or aspirations; it’s a deep-rooted understanding of food and cooking from scratch, using what’s in season or preserving food for use in winter. A lot of chefs have returned to the traditions of pickling, curing and smoking.

How did your love of food develop?
Food has always been a really big part of my life. My Norwegian grandparents had a farm on the west coast of Norway so I grew up understanding where food comes from and the importance of the ecosystem and the seasons. In 1999 I moved to the UK and found that my food experience was not shared by my UK friends. I got the sense that their relationship with food was one of detachment. If, like me, you loved good food, you were considered a ‘foodie’. I used to get teased because I bought organic whole milk, but that’s a normal food where I grew up.
What led to you following a career in food?
After university I thought about going to law school, I went to the States and I considered doing a PhD. But none of it made me feel joyous. I wanted to do something that made me happy, and I realised that where I was happiest was in the kitchen.
I describe myself as a cook, not a chef. I make really simple things. I’m constantly amazed how people try to overcomplicate food. I think people forget that all you need to do is keep it simple, source good ingredients and you can’t go wrong. It’s a very European philosophy. It’s also liberating; the idea of knowing that you can keep things simple, have faith and trust your instincts.
And don’t just eat something because it’s on trend! I don’t like offal and I don’t feel I have to eat it, even though it’s fashionable at the moment. Food is not a badge of honour! Have the confidence to know what you like and know there are certain things you can do well. Scandinavian food is what I do best.
What’s your favourite food?
I’m greedy so I like lots of different things! I like variety and textures. The more variety you have in your diet, the more interesting it is and the more nutrients you get. I’ve had friends who’ve cut out whole food groups from their diet. To me, that’s not understanding the fundamentals of nutrition. Even sugar, I think, is fine if you have small amounts of it. The idea that you’re supposed to bake a cake using sweet potato or beetroot: I think, just eat less cake!
I’d say there are a few things that I always have in my kitchen: eggs (they’re my one standby food), butter, herbs, Swedish crispbread and fresh, seasonal vegetables. I love things that are sour, such as lemons, vinegar and pomegranate molasses, because they can really bring something to a dish. And dark chocolate!
Tell us about your new book, ‘Hygge: The Secrets of Nordic Living’.
It’s essentially a lifestyle book focused around the notion of hygge. The whole idea was to give some narrative and context to the Scandinavian way of living, and also to give advice on how we can all live like that.
There’s lots of good data showing that Scandinavia has exceptional standards of living and in this book I’m trying to analyse why. I studied anthropology at university so the idea behind the book is to understand everything in context. It’s too simplistic to look at one element of Nordic living; everything is interlinked.
There are 50 recipes and a chapter on cocktails so there’s definitely a food and drink element to the book. It’s nice to have recipes but I’ve already written two food books and contributed to 12 others and I felt like I was getting slightly confined by it. The food and drink in this book is in keeping with the hygge philosophy of keeping things simple and paring everything back.
There are also chapters on design, interiors and fashion. Particularly as we go into winter, all that Nordic aesthetic looks really enticing. It’s not brutal or minimalist, it’s much softer, warmer and cosier – and it makes you feel happier.
The book also has elements relating to kinship and community, as well as nature and the outdoors. Everything starts with nature. The hygge mindset is based on the strategies we developed to get us through the long, dark winters.

So, what are the secrets of a hygge lifestyle?
Hygge is a response to the dark and cold Scandinavian winters. It affects what we wear and the way we eat. There are several elements but it’s about getting your life back to basics, stepping back and seeing what’s important.
Where I come from, people don’t care so much about material wealth and status symbols. Most of the Nordic countries were very poor for a very long time and that has shaped our perspective on life. Yes, it’s nice to have nice things but we have a sense of making the most of our time on this planet.
The hygge lifestyle is very democratic. You don’t have to radically overhaul your life. It’s just about not overcomplicating things and taking time out to enjoy the moments in your life. It enriches us, it’s nourishing.

In 1999 I moved to the UK and found that my food experience was not shared by my UK friends. I got the sense that their relationship with food was one of detachment. If, like me, you loved good food, you were considered a ‘foodie’. I used to get teased because I bought organic whole milk, but that’s a normal food where I grew up. What led to you following a career in food? After university I thought about going to law school, I went to the States and I considered doing a PhD. But none of it made me feel joyous. I wanted to do something that made me happy, and I realised that where I was happiest was in the kitchen. I describe myself as a cook, not a chef. I make really simple things. I’m constantly amazed how people try to overcomplicate food. I think people forget that all you need to do is keep it simple, source good ingredients and you can’t go wrong. It’s a very European philosophy. It’s also liberating; the idea of knowing that you can keep things simple, have faith and trust your instincts. And don’t just eat something because it’s on trend! I don’t like offal and I don’t feel I have to eat it, even though it’s fashionable at the moment. Food is not a badge of honour! Have the confidence to know what you like and know there are certain things you can do well. Scandinavian food is what I do best. What’s your favourite food? I’m greedy so I like lots of different things! I like variety and textures. The more variety you have in your diet, the more interesting it is and the more nutrients you get. I’ve had friends who’ve cut out whole food groups from their diet. To me, that’s not understanding the fundamentals of nutrition. Even sugar, I think, is fine if you have small amounts of it. The idea that you’re supposed to bake a cake using sweet potato or beetroot: I think, just eat less cake! I’d say there are a few things that I always have in my kitchen: eggs (they’re my one standby food), butter, herbs, Swedish crispbread and fresh, seasonal vegetables. I love things that are sour, such as lemons, vinegar and pomegranate molasses, because they can really bring something to a dish. And dark chocolate! Tell us about your new book, ‘Hygge: The Secrets of Nordic Living’. It’s essentially a lifestyle book focused around the notion of hygge. The whole idea was to give some narrative and context to the Scandinavian way of living, and also to give advice on how we can all live like that. There’s lots of good data showing that Scandinavia has exceptional standards of living and in this book I’m trying to analyse why. I studied anthropology at university so the idea behind the book is to understand everything in context. It’s too simplistic to look at one element of Nordic living; everything is interlinked. There are 50 recipes and a chapter on cocktails so there’s definitely a food and drink element to the book. It’s nice to have recipes but I’ve already written two food books and contributed to 12 others and I felt like I was getting slightly confined by it. The food and drink in this book is in keeping with the hygge philosophy of keeping things simple and paring everything back. There are also chapters on design, interiors and fashion. Particularly as we go into winter, all that Nordic aesthetic looks really enticing. It’s not brutal or minimalist, it’s much softer, warmer and cosier – and it makes you feel happier. The book also has elements relating to kinship and community, as well as nature and the outdoors. Everything starts with nature. The hygge mindset is based on the strategies we developed to get us through the long, dark winters. So, what are the secrets of a hygge lifestyle? Hygge is a response to the dark and cold Scandinavian winters. It affects what we wear and the way we eat. There are several elements but it’s about getting your life back to basics, stepping back and seeing what’s important. Where I come from, people don’t care so much about material wealth and status symbols. Most of the Nordic countries were very poor for a very long time and that has shaped our perspective on life. Yes, it’s nice to have nice things but we have a sense of making the most of our time on this planet. The hygge lifestyle is very democratic. You don’t have to radically overhaul your life. It’s just about not overcomplicating things and taking time out to enjoy the moments in your life. It enriches us, it’s nourishing. (Posted on October 12, 2016) We’re unbelievably excited about presenting a special event with renowned food writer and cook Signe Johansen. It’s at Harrogate Theatre on 25th October, and we’d love you to join us! We’re not exaggerating when we say that Signe – or Sig, as she prefers to be called – is one of our Scandi baking idols. And with good reason: she’s written two amazing books on the art of Scandinavian baking and cooking. Her latest release, How to Hygge: The Secrets of Nordic Living, is out on 20th October and is all about the Scandinavian lifestyle. It features 50 recipes alongside lots of other tips on taking a more ‘hygge’ approach to life. We definitely like the sound of that! (By the way, if you haven’t heard of hygge before, take a look at our blog here to find out more.) When we heard that Sig was touring the UK to launch her new book, we got in touch with her and asked if she’d like to come to Harrogate and hold an event with us. Imagine how thrilled we were when she said yes! So that’s how we’ve ended up presenting a special one-off Q&A and book signing event with Sig at Harrogate Theatre. We’ll be serving some Scandi treats, interviewing Sig on stage about her book and asking her about everything from her Norwegian childhood and her love of Scandi food to her Nordic approach to life. Along with our sister restaurant Norse and supplier Hesper Farm Skyr, we’ll be providing Scandi food such as cinnamon buns, waffles and skolebrød. Also joining us will be The Little Ripon Bookshop, who will be providing copies of How to Hygge for the book signing. Leeds-based Scandi lifestyle and interiors retailer Enkelhed will be setting up a pop-up shop for the evening, selling homeware such as this: Entry will be on a pay-as-you-feel basis, with proceeds going to the Harrogate Theatre Trust. Signe Johansen Sig began her career in food after leaving university, training at the Leiths School of Food and Wine in London. She worked at several of the UK’s top restaurants before returning to university to complete a Masters in the anthropology of food. Her book Scandilicious: Secrets of Scandinavian Cooking was published in 2011, containing more than 80 recipes from traditional Scandi cuisine, from cinnamon chestnut bread to homemade gravadlax. This was followed by Scandilicious Baking in 2012 which, as the name suggests, included recipes for baked Scandi treats that were commonly served during Sig’s childhood in Norway. Sig has also contributed to 12 other food and restaurant books, as well as writing articles for national newspapers and magazines, and appearing on TV. Her latest book, How To Hygge: The Secrets of Nordic Living is published later this month and explains more about the concept that’s become a bit of a buzz word this year. In exploring the culture of hygge, the book guides readers on how to adopt it in their life. It includes sections on the joy of fika, Scandi style in the home and food and drink, including 50 recipes. We spoke to Sig to find out more about her, her love of food, her visit to Harrogate and, of course, her tips on following a hygge lifestyle. Here’s what she had to say: Hi Sig. We can’t wait to meet you for the event at Harrogate Theatre! Have you ever visited the town before? I’m so excited about coming to Harrogate! I’ve been to York, Leeds and the Dales but not Harrogate. I’m really looking forward to seeing what’s going on. Whenever I go to a new place, I like to explore. I’ve been following Baltzersen’s on social media for a while now and I love what they do so I can’t wait to meet the team. Everything they make always looks so delicious and they have such a positive attitude. I wish we had a Baltzersen’s in London! Our mission at Baltzersen’s is ‘to provide Scandi-inspired food to comfort and sustain’ - and our customers love it! Why do you think Scandinavian food has become so popular in the UK? I think it’s more a question of why hasn’t it happened sooner? Britain has a love affair with the flavours of the Mediterranean but in terms of the kind of food that is grown here, there’s a lot more in common with Scandinavia. It’s been interesting in the last two years to watch the rise of the new Nordic food movement. The Scandinavian attitude to food isn’t about class or aspirations; it’s a deep-rooted understanding of food and cooking from scratch, using what’s in season or preserving food for use in winter. A lot of chefs have returned to the traditions of pickling, curing and smoking. How did your love of food develop? Food has always been a really big part of my life. Hygge is a Danish-Norwegian word that describes a feeling of coziness, kinship, and hospitality. This concept has
recently become popular in the U.S, as people look for ways to enjoy simple pleasures and increase their quality of life.
This book offers a variety of recipes and strategies for making one's life more hygge, including striving for a balance of
sedate and vigorous activities, spending time both in and outdoors, being self-sufficient, welcoming others into one's
home through homemade food and drink, and cultivating a functional and stylish home. Johansen incorporates
inspiration from luminaries such as Henrik Ibsen, Diane Ackerman, Ralph Waldo Emerson, and even Ron Swanson.
The bulk of the book consists of over 50 recipes for snacks, meals, desserts, and drinks. The recipes all have
Scandinavian roots, and the author includes a few sentences with each about her own inspiration. As camaraderie is a
defining characteristic of hygge, ideally the preparation of these dishes will be a shared activity that brings the
