WRITINGS
SIDELIGHTS
Anne Byrn is a cookbook author based in Nashville, Tennessee. She graduated from the University of Georgia and previously worked as the food editor at the Atlanta Journal-Constitution.
The Cake Mix Doctor and The Dinner Doctor
In 1999, Byrn released her popular book The Cake Mix Doctor. The book was inspired by an article she wrote for a newspaper in Nashville. Byrn expanded the idea she introduced in the article and created a full-length book with many recipes. In this volume, she explains to readers how to take store-bought cake mix and add ingredients that will make for cakes that are more interesting and tasty. Other editions of The Cake Mix Doctor have been published, including a 2003 deluxe edition.
In The Dinner Doctor: Quick Cooking When Time Is Short, Byrn includes recipes for meals that use store-bought, packaged or precooked ingredients. She argues that such ingredients help to provide busy cooks with shortcuts for meals that are as delicious as if they had been made completely from scratch. Among the sections in the book is one in which Byrn offers fifteen suggestions for ways to use meat from roasted chickens bought at a grocery store deli. Judith Sutton, in Library Journal, compared The Dinner Doctor to other similar books and stated, “Overall Byrn’s recipes seem fresher and more imaginative.”
Cupcakes! and The Cake Mix Doctor Returns!
Byrn returns to baking desserts in Cupcakes! From the Cake Mix Doctor. Similar to The Cake Mix Doctor, this volume provides recipes that use store-bought mixes as a foundation from which to add ingredients. Among the book’s 135 recipes are jelly doughnut cupcakes, breakfast cupcakes, mini strawberry trifles, and a wedding cake made from cupcakes. Byrn also includes recipes for cupcakes for children. Sutton, the Library Journal reviewer, suggested that “The Cake Mix Doctor‘s many fans will be delighted.” “The detailed table of contents and alluring cupcake likenesses in the opening assemblage of photos will have readers salivating,” asserted a critic in Publishers Weekly.
Byrn offers even more quick recipes using store-bought cake mixes in her 2009 volume The Cake Mix Doctor Returns! With 160 All-New Recipes for Luscious Layer Cakes, Buttery Pound Cakes, Gooey Brownies–Even a Wedding Cake. The majority of the recipes are for cakes, though Byrn also includes recipes for brownies and cookies. Each of the recipes in the book includes a photo featuring the completed dessert. Byrn notes that some of the ideas for the recipes were contributed by fans of her earlier works. She provides recipes for desserts, including chocolate-covered cherry cake, double coconut macadamia cake, and lemonade chiffon layer cake. A writer in Publishers Weekly commented, “Byrn’s friendly, collaborational prose offers confidence even to kitchen neophytes.” The writer concluded, “This book will become a go-to guide.” “It’s a highly recommended, top pick,” asserted a California Bookwatch reviewer.
The Cake Mix Doctor Bakes Gluten-Free and Unbelievably Gluten-Free!
In The Cake Mix Doctor Bakes Gluten-Free: Classic Cakes, Cookies, Brownies, Bundts, and Bars, Byrn provides recipes geared toward those who want to limit their gluten intake, whether they have a gluten intolerance or are simply trying to eat more healthfully. She discusses the ingredients used in store-bought gluten-free baking mixes, noting that they tend to combine to make desserts that have textures that are less than desirable. Byrn offers suggestions for additions to gluten-free baking mixes that will help to resolve the texture problems. The book includes recipes for carrot cake, Boston cream pie, hummingbird cake, German chocolate cake, and birthday cake. “Passionate bakers and food purists may find that this book lacks surprises,” remarked Carolyn M. Schwartz, contributor to Library Journal. A Publishers Weekly critic commented on the timeliness of the book’s subject, stating: “The popularity of a diet restricting gluten [is] at an all-time high.”
Byrn again addresses gluten-intolerant and gluten-averse eaters and readers in Unbelievably Gluten-Free! Dinner Dishes You Never Thought You’d Be Able to Eat Again. This volume provides savory recipes, as well as desserts. Some, but not all, of the recipes feature gluten-free mixes that can be purchased at the grocery store. They are meant to be quick and easy for families that lack time to spend in the kitchen. Byrn, who is southern, offers several recipes inspired by traditional dishes from the South, including fried green tomatoes, country-fried steak, pecan pie, and cornbread. There are also recipes for pasta, soda bread, smashed chicken, chicken pot pie, tuna and white bean salad, and onion fritters. A Publishers Weekly reviewer suggested, “Byrn’s latest cookbook invites readers to a culinary adventure … where a little experimentation yields surprising results.”
Anne Byrn Saves the Day! Cookbook and American Cake
In Anne Byrn Saves the Day! Cookbook: 125 Guaranteed-to-Please, Go-To Recipes to Rescue Any Occasion, which was released in 2014, Byrn includes recipes for appetizers, entrees, and desserts. In some cases, the recipes include shortcuts in the form of store-bought ingredients. Spiced peanuts and artichoke dip are among the appetizers included in the book. Main courses include lasagna and spaghetti carbonara. Sour-cream coffee cake is one of the desserts Byrn provides in the book. Some of the recipes include optional additional ingredients or tips for cooks who want to complete portions of the recipe ahead of time. Lisa Campbell, critic in Library Journal, commented: “This solid set of weeknight-friendly crowd-pleasers presents smart shortcuts but not too many processed … ingredients.” A Publishers Weekly contributor noted that the book offers recipes for “can’t-miss classics that are fairly easy to prepare.”
Byrn discusses the history of baking in the United States in her 2016 volume American Cake: From Colonial Gingerbread to Classic Layer; The Stories and Recipes behind More Than 125 of Our Best-Loved Cakes From Past to Present. The book is divided into sections based on time period. Byrn begins with a section focused on cakes whose recipes were developed between the years 1650 and 1799. She continues with sections on subsequent time periods, ending with a chapter on baking from the year 2000 on. The book contains sections on influential figures in baking, including Betty Crocker and Martha Stewart. Reviewing the book in Publishers Weekly, a writer suggested, “These well researched and written pages go far beyond the average baking guide.”

About Anne
AB_HP_1
Welcome to my home and office where I cook, bake, and live. I am known as the “New York Times bestselling cookbook author who has inspired millions of Americans to bake cake.”
My passion has always been great tasting food made from local and seasonal ingredients, and, may I add, shared with family and friends on my porch. I love to stage impromptu dinner parties, grow heirloom flowers, revisit old recipes, and help others cook and bake better. That’s why book titles like Save the Day and What Can I Bring? appealed to me. And as a former newspaper journalist, I have always been curious – who, what, when, where, and why are embedded in my soul. This would come in handy as I researched my new book, American Cake.
I baked my first cake – devil’s food – standing on my tip-toes in my mother’s 1960s Nashville kitchen. My mother, Bebe, was an outstanding Southern cook, truly self-taught because she could not cook when she and my father were married. But through the years of raising daughters and cooking for family and friends, she could do it all and make everything look effortless. And I learned to cook by watching my mom.
As a teenager I became my family’s designated birthday cake baker. After graduating from the University of Georgia, I would write about the Lane Cake, Japanese Fruit Cake, barbecue, scuppernong jam, cornbread, souffles, local apples, and a wide range of topics as food editor of The Atlanta Journal-Constitution for many years. On sabbatical from the paper, I baked in Paris at La Varenne Ecole de Cuisine. And I lived briefly in England.
But a decade later, in the middle of raising a busy family, I reached for a cake mix to bake last-minute cupcakes for a school bake sale. I wrote an article for our Nashville newspaper on favorite recipes to doctor up cake mix, and developed it into the New York Times bestselling book called The Cake Mix Doctor (Workman, 1999). It was a break-out hit, instructing readers to skip the box directions, following mine instead. Traveling the country on book tours with this book and others, I searched for great American regional cakes. And when home I baked those cakes in my kitchen, blogged about them, and through my website and newsletter have fielded thousands of reader questions about cake baking. In 2010, I launched a supermarket line of my own natural cake mixes, with no artificial ingredients.
American Cake is a trip back in time baking classic cakes throughout our history. These are from-scratch cakes, and they range from easy one-bowl brownies to the more complicated Lady Baltimore and other showy cakes. When American Cake launches this fall I will be on the road, teaching classes and signing copies at book festivals. But when I am home in Nashville, I garden, cook, and enjoy the company of my family, friends, and dogs. There is often a cake in the oven, a chicken in the smoker, and if it is summertime, fresh squash or green beans simmering on the stove.

American Cake: From Colonial Gingerbread to Classic Layer, The Story Beyond Our Best-Loved Cakes From Past to Present
Anne Byrn. Rodale, $29.99 (336p) ISBN 978-1-62336-543-1
This culinary walk through American history is both fascinating and kitchen-inspiring. Bestselling author Byrn presents chapters in chronological
order (from "1650 to 1799: Baking Cakes in Early America" through "2000 to the Present: The Cakes of the New Millennium"). All recipes are
designed for the modern kitchen, with minor changes made when needed (hickory nuts aren't available to most bakers, and apparently Martha
Washington's pans were bigger than those used today). Headnotes detail the lineage of cakes, including the Robert E. Lee Cake, a recipe the
Confederate general's wife, Mary Curtis Lee, passed on through the family that describes a layer cake filled with a bright lemon filling, topped
with an orange and lemon icing. Fast-forward to the new millennium for the Smith Island Cake, an exquisite 10-layer fudge-frosted extravaganza
that was named Maryland's state cake in 2008. In between, readers will find decade-defining information, such as the popularity of using baby
food fruit purees in baking in the 1970s, and sidebars on prominent baking figures who have made their marks in kitchens across the country,
including Betty Crocker and Martha Stewart. These well researched and written pages go fat beyond the average baking guide. Agent: David

Byrn, well known for her best-selling Cake Mix Doctor and Dinner Doctor cookbooks, returns with a collection that extends her brand to even
more courses and types of foods. Seeking to save home cooks from common culinary "emergencies"--recipe ruts, last-minute potluck requests,
and unexpected dinner guests, for example--she offers 125 recipes grouped by course and tagged with catchy categories (e.g., Company's
Coming, Too Hot To Cook, What To Serve at Book Club, Very Vegetarian). Many recipes, including Beth's autumn salad with maple vinaigrette
and Marian's fish and potato pie, were contributed by Byrn's fans, and most include helpful notes and serving suggestions. Sidebars provide
additional tips, including how to cook risotto in a microwave in 22 minutes. VERDICT This solid set of weeknight-friendly crowd-pleasers
presents smart shortcuts but not too many processed or brand-name ingredients.

Byrn's two Cake Doctor books--recipes based on cake mixes doctored with various additions, fillings, and other garnishes--have sold more than
1.5 million copies. Now she provides easy recipes for the rest of the meal, using prepared convenience foods of all types. Andrew Schloss's recent
Almost from Scratch also offers "convenience cuisine" recipes, but though there are certainly some combinations here that will make purists
blanch, overall Byrn's recipes seem fresher and more imaginative. In addition, many of them are super-quick, taking no more tban ten minutes to
put together. There are also dozens of ideas for other dishes, such as "15 Ways To Doctor a Deli Roast Chicken," along with hundreds of
timesaving tips and helpful hints. Some fans may be disappointed that Byrn has tackled savory dishes rather than sweets this time, but this book is
sure to be in demand.

such as Mini Strawberry Trifles baked in a muffin pan, to Breakfast Cupcakes (a.k.a. muffins) to Jelly Doughnut Cupcakes--along with an
assortment of toppings, frostings, and glazes. There are imaginative cupcakes just for kids, fancy ones for adults, and elegant creations like a

Byrn's newest book in her best-selling "Cake Mix Doctor" series aims to minimize the difficulty of gluten-free cake making and reintroduce
favorites such as carrot cake and Boston cream pie into the lives of millions who live with celiac disease or gluten intolerance. Byrn's recipes
begin with a box of gluten-free commercial cake mix and then incorporate other ingredients in an attempt to replicate a homemade taste. Each
recipe is accompanied by full-color photographs of the finished product, always a welcome addition. Passionate bakers and food purists may find
that this book lacks surprises and pales in comparison to similar gluten-free baking books like Annalise G. Roberts's Gluten-Free Baking
Classics. VERDICT This title will be most at home in a collection of other cookbooks geared toward busy or casual bakers. Those with limited
resources for specialty baking books should look elsewhere. [Twenty-city tour.]--Carolyn M. Schwartz, Westfield State Univ. Lib., MA

Who hasn't taken a cake mix and added a little something to it to spice up the end result? Well, until The Cake Mix Doctor (Workman) by Anne
Byrn, no one thought of doing an entire cookbook on making the most out of off-the-shelf baking.
Now the book is, um, selling like hotcakes.
The Cake Mix Doctor was one of the first projects for Bruce Harris when he joined Workman in the spring as publisher. "I thought it was kind of
a cute idea, but I didn't expect it would have this kind of velocity or interest," Harris told PW. After eight printings in nine months, there are more
than 360,000 copies in print. "The initial printing was 50,000," said Harris, 'and we thought that was ambitious."
Publicist Jim Eber was enthusiastic enough about The Cake Mix Doctor that he bet publicity director Ellen Morgenstern that he could get 12
newspapers to cover the book on the front page of their food sections. By the last count Byrn and the book have made 37 front food pages in
newspapers ranging from the Washington Post to the Kansas City Star. Byrn is a QVC darling, having been asked back four times. "She sold
more than 20 books a second," said Eber. "That's 41,000 books in 30
Byrn, a journalist, conceived the idea for her book after she received an overwhelming response to an article she had written for The Tennessean
called "The Cake Doctor Is In." She began collecting the recipes people sent to her and started to create her own. A sequel is already planned, but
with all the media attention she's been getting, Byrn has not had a minute to work on it. Eber said people from all over the country want this book
because it is so easy to follow and Byrn's suggestions work. When the author was on the radio in Des Moines, a listener called in to say she had
one of the cakes in the oven right then. Now, that's a publicist's dream.
However, there was a time in the very beginning when Workman wasn't so confident about its summer hit. When Harris and Eber were meeting
with Barnes & Noble, Harris thought it might be a good idea to bring a few samples along. A bakery would've charged a couple of hundred
dollars for the order, so Eber volunteered to make the cakes himself. A Lemon Buttermilk Poppyseed Cake and an Incredible Melted Ice Cream
Cake later, Workman had a substantial order on its hands.

Unbelievably Gluten-Free!: Dinner Dishes You Never Thought You'd Be Able to Eat Again
Anne Byrn. Workman, $18.95 trade paper (416p) ISBN 978-0-7611-7168-3
Former food editor and Cake Mix Doctor series creator Byrn (The Cake Mix Doctor Bakes Gluten Free) hails from the South, and the region's
tradition of deeply satisfying comfort food figures prominently in this collection of 125 gluten-free recipes for breakfast, appetizers, main dishes,
soups and salads, breads, snacks, and desserts. Byrn, who does not have gluten or dairy sensitivities, directs her effort toward families with mixed
nutritional needs, hearty appetites, little time to shop and prepare meals, and a budget. Many recipes call for store-bought gluten-free mixes,
which Byrn has tweaked to achieve textures and tastes nearly identical to gluten-laden fare. From her country-fried steak, fried green tomatoes,
skillet cornbread, and pecan pie, to Indian fried onion fritters, tempura, spinach and feta balls, and Irish soda bread, Byrne covers diverse territory.
There is plenty of pasta, a decadent flourless chocolate cake, and a version of "smashed chicken" that will likely be a crowd pleaser. Aside from
its many outstanding gluten-free versions of favorite Foods like chicken pot pie and brownies and many naturally gluten-free foods (e.g., a tuna
and white bean salad), Byrn's latest cookbook invites readers to a culinary adventure, whether by choice or medical necessity, where a little
experimentation yields surprising results. (Oct.)

The Cake Mix Doctor Returns: With 160 All-New Recipes for Luscious Layer Cakes, Buttery Pound Cakes, Gooey Brownies--Even a Wedding
Cake
Anne Byrn. Workman, $25.95 (496p) ISBN 978-0-76114694-9
This volume isn't about artisanal baking nor does it pretend to be. And that won't bother the legions of devoted Cake Mix Doctor fans. Byrn's
sixth book goes back to what made her famous: a whole lot of recipes for comforting cakes (plus some cookies and brownies) made easy thanks
to the use of purchased cake mix and other supermarket ingredients. Readers are welcomed with thumbnail color photographs of all cakes in the
book, with page numbers to enable quick flipping when a confection catches the eye. A hint-filled introduction, written in Byrn's friendly,
collaborational prose, offers confidence even to kitchen neophytes. And then there are the recipes, 160 of them, many contributed by fans. They
include lemonade chiffon layer cake with raspberry filling, made with yellow cake mix, frozen lemonade concentrate and raspberry pie filling;
double coconut macadamia cake, featuring yellow or butter cake mix and vanilla instant pudding mix; chocolate-covered cherry cake, utilizing
chocolate cake mix with pudding and cherry pie filling; and plenty more appealingly straightforward sweet treats. For those who want to have
their mostly homemade cake and ear it, too, this book will become a go-to guide. (Oct.)

From chocolate ganache to toppings with panache, this latest addition to the Cake Mix Doctor canon offers creative ideas and 135 recipes for tiny,
delicious cakes. The detailed table of contents and alluring cupcake likenesses in the opening assemblage of photos will have readers salivating.
The Cupcakes with Class chapter offers tasty elegance, from Cappnccino Chip to Harvey Wallbanger (which contains vodka and liqueur). Kids'
cupcakes range from Cotton Candy to Caterpillar, and priorities delightfully in place, Byrn provides party-planning suggestions for favors and
activities that complement the cupcakes. Helpful hints abound via "The Cupcake Doctor Says" tidbits, which appear throughout the book, and
mini-essays that ponder questions such as "What's a Muffin? What's a Cupcake?" The Muffins: Breakfast Cupcakes chapter suggests ways to
move beyond the classic blueberry (though Byrn offers a new take on that standby, too); Cupcake Cousins and Cupcake Creations will give do-ityourselfers
the confidence to try making fancy desserts in muffin tins. Fans of the regular QVC guest will already know that homemade frostings
are a must, "the strand of pearls setting off the classic little black dress." Recipes for creams, glazes, frostings and sauces will help cupcake chefs
"experiment and enjoy." (May)

With the popularity of a diet restricting gluten at an all-time high, it's no surprise to find this title marking the latest addition to Byrn's popular
Cake Mix Doctor series. The premise of the established series is for home bakers to rely on "doctoring" mixes to "jump-start" dessert making.
Manufactured gluten-free mixes are based primarily on white rice flour and an added starch, often contributing to a less-than-desired, even
unpleasant texture. Byrn's method of add-ins such as fruit and candy, and careful monitoring of baking times, creates a better cake. The recipes
are divided into chapters including "Layers"; "Bundt"; "Brownies, bars and cookies"; and "Cupcakes and muffins." Traditional cakes, including
yellow birthday cake, classic carrot cake; German chocolate, and Boston cream pie are represented, as are the less familiar hummingbird cake and
hot lemon poke cake. Cake mixes are used for muffins as well as bars, and a doctored gluten-free brownie mix recipe makes an appearance for
those seeking the dessert standby. (Dec.)

Save the Day Cookbook
Anne Byrn. Workman, $18.95 trade paper (368p) ISBN 978-0-7611-7610-7
Veteran cookbook author Byrn (Cake Mix Doctor series) broadens her scope here to include can't-miss classics that are fairly easy to prepare.
Drawing from her own vault of recipes as well as from friends and followers, Byrn offers up 125 reliable if unremarkable everyday dishes.
Assuming readers have their larders stocked with staples, such as canned beans and tomatoes, and spices and basic proteins, such as ground
turkey and nuts, Byrn provides clear instructions for dishes like stuffed mushrooms, classic Greek salad, spaghetti carbonara, and sour cream
coffee cake from scratch. Home cooks will find plenty of suggestions for appetizers (artichoke dip, spiced peanuts) and mains (lasagna, a lowcountry
shrimp boil)--most of which are accompanied by make-ahead tips as well as suggestions for jazzing the recipes up with additional
ingredients. (Nov.)
